From the egg farmer David Siegel:
“I give my hens a lot of space to roam around, scratch at the ground and act like chickens. What truly makes my eggs special is that I also want to make sure they always have farm fresh food to eat, in addition to their regular chicken food. Hens are amazing at foraging and clearing all of the green stuff out of their pasture. I have movable fences so that I can rotate them onto fresh ground. Sometimes they clear a field before I can rotate them, so I supplement their foraging with organic vegetables from my farm—particularly sunflower greens, pea shoots, wheat grass and buckwheat greens, which they get every week.
I also sprout buckets full of local organic grains from Lightening Tree Farm for them. It is particularly important for me to add fresh greens and sprouts into their diet in the winter when there is nothing for them to forage. Not only do these practices make the chickens healthy and happy, but it makes for a healthier, better tasting egg.”
