Basil Pesto


2 cups basil
½ cup extra virgin olive oil
2 cloves of garlic, cut in small pieces
3 tablespoons of pine nuts
pinch of salt
1 cup grated parmesan
1 to 1 ½  pounds of pasta


Put all ingredients except parmesan in food processor. 
Process until smooth.
Pour into bowl and fold in cheese.
Reserve a little water from pasta cooking.
Toss pasta with pesto the remaining water.

1 cup lukewarm water
¼ cup chopped fresh basil
¼ cup chopped fresh rosemary (or any other fresh herb)
2 tablespoons chopped garlic
2 tablespoons butter
1 teaspoon salt
2 cups bread flour
1 cup whole wheat flour
2 teaspoons yeast
3 tablespoons olive oil (divided)


Measure and pour all ingredients except olive oil into baking pan.
Select dough setting on breadmaker.
When dough is ready (2 hours) remove from pan and place in a bowl coated with 1 tablespoon of olive oil. Let rest for 30 minutes.
Divide dough in half. Place each half on a baking sheet and roll into 8 X 9 inch rectangles about ½ inch thick.
Brush dough with remaining olive oil.
Bake in a preheated 425° F oven for 20 minutes.

Pasta Salad


5 cups pasta
1-2 big tomatoes
2 cups basil
1 cup mozzarella cheese
2/3 cup vegetable oil or olive oil
1 cup balsamic vinegar
pine nuts
2-3 tablespoons mustard
salt and pepper to taste


Mix oil, balsamic vinegar, mustard, salt, and pepper.
Boil pasta.
Pour vinaigrette on pasta.
Add chopped or diced tomatoes and chopped basil.
Add toasted pine nuts and shredded mozzarella cheese before serving.
