Lentil and Sauteed Vegetable Salad

2 cups brown lentils
1 cup beluga lentils (small, black)
1 smallish onion
4 small sticks celery
2 small carrots
2 cloves garlic
5 leaves swiss chard
spices (Indian mixed spices)

Boil lentils separately (different sizes, cook differently) in enough water not to dry out with a little salt, olive oil and spices in the water until tender. It may take 20-30 minutes on medium heat.

In a pan sautee onion and garlic until clear. Add celery, then carrots, then stems of swiss chard and finally leaves of celery and swiss chard and finally leaves of celery and swiss chard.

Flavor with spices, salt, pepper, and vinegar.

Toss veggies and lentils together.

Salt, pepper, white wine vinegar to taste

Serve warm or cool.

Swiss Chard with Bacon

(can substitute with other greens such as beet greens, kale,
spinach, collards, etc)

2 slices of bacon chopped
2 – 3 cloves of garlic minced or sliced
half of an onion chopped (preferably sweet type of onion)
bunch of swiss chard chopped in bite size pieces including stem
olive oil
splash of vinegar (can use balsamic, red wine, sherry or apple cider)
salt and pepper

Cook chopped bacon in skillet with about 1/2 TBSP of olive oil till crisp.  Remove
bacon and set aside on a paper toweled lined plate to use later.  Depending on how
fatty the bacon is, drain some of the oil/grease from skillet leaving about 2 TBSP.
Sautee the onion in the bacon/olive oil grease for couple of minuets.  Add the
garlic and give it a swirl before adding the chards in batches.  Wilt the chard and
incorporate the onion mixture (I use tongs mix the chard/oil together).  Set on low
heat with a tablespoon of water and cover the skillet till desired doneness (5 – 10
mins).   Uncover the skillet and let some of the water evaporate before adding a
splash of vinegar.  Season with salt and pepper and add the bacon back in before
