Purple Scrapes
1/2 pound beets
2 tablespoons freshly squeezed orange juice
2 tablespoon freshly squeezed lemon juice
1 tablespoon extra virgin olive oil
2 tablespoons mint
Salt to taste
1. Grate the beets.
2. Simply mix well the grated beets in the mixture of juices, oil and mint. I think it is best if it has been refrigerated and sits in the juices for a while, though it can be served and enjoyed fresh.
3. Add Salt.
* I should say the quantities of juice and beets can vary and the dish still comes out well. In other words, beets and juices. . to taste.
