Pan-Fried Green Onion (Korean Scallion Pancakes, “Pa-chon” )

2 bundles thin green onions
1/2 cup thinly sliced beef
1/4 cup clams (optional)
1/4 cup sliced squid (optional)
1/4 cup chopped shrimp (optional)
1/4 cup crab meat (optional)
3 eggs
3 tablespoons flour

Beef Seasoning Mixture:
1/2 tbsp soy sauce
1/2 tsp salt
1/2 tbsp chopped green onion
1 tsp sesame oil
dash of pepper
1 tbsp sesame salt

1. Clean green onions and quarter lengthwise if thick and halve if thin. To make plate-size pa-chon, cut the onions in the middle or alittle shorter than the diameter of the plate. Makes about 2 plate-szoe pa-chon.

2. Season meat with Meat Seasoning ingredients.

3. If adding squid or any shellfish (optional), shell and devein the shrimp. Remove skin from squid and cut into fine slices. Cut shellfish into small pieces.

4. For making large pa-chon, beat eggs. Sprinkle flour over pieces of green onion and mix them with half of the beaten egg. Spread the mixture on a heated, oiled pan, place the seasoned meat and shellfish between the green onion, then cover with the rest of the egg. Lower heat to let the ingredients cook. Turn when one side is well cooked.

5. Serve with sauce mixture using vinegar and soy sauce.
