The first cooking class for 2010

Fellow CSA Members,

We are pleased to announce our first Cooking Class of the Season! CSA member and Certified Nutrition Specialist Patricia Cai will be giving a demonstration on food prep with a focus on CSA veggies. She will prepare two vegetable dishes, and discuss the merits of food versus supplements. She will follow with a question and answer period. The class will be hosted by Chiara Scandone-Puglisi at 249 86th Street on Saturday June 26th from 11.30am – 12.30 pm. Please note there is a 25 person limit, because of space constraints. About Patricia Cai, DC, MSCN, CNS
Dr. Patty was born in Shanghai, China. After studying Chinese literature in Shanghai University for a year, she came to New York. She attended Brooklyn College, and earned the degree of Doctor in Chiropractic (DC) from New York Chiropractic College in 1998.

After graduation, Dr. Patty held a private practice in Queens until the birth of her twin girls, Hannah and Camellia. Camellia suffered severe brain damage at birth. She has cerebral palsy with seizure disorders, and is cortically blind. Because of her various feeding issues, Dr. Patty decided to make her own baby foods in order to achieve desired consistency and taste to improve Camellia’s eating skills. Food preparation deepened Dr. Cai’s interest in nutrition, and led her to complete a master’s degree in clinical nutrition (MSCN). She is now a certified nutritional specialist (CNS), honored by the American College of Nutrition.

Dr. Patty currently practices part-time in Brooklyn, and is an adjunct assistant professor in Brooklyn College, teaching human anatomy and human physiology.
